Pumpkin Pecan Bread

Every year I try to cook up and freeze some pumpkin so that throughout the year I can make this Pumpkin Pecan Bread.  I make it more healthy by replacing half of the fat with cottage cheese and adding some ground flax.  (notice the well used, falling apart, recipe book) Such a yummy bread... often it is all I need on a busy morning.
